Vegetable Pasta
Ingredients
Pasta-1 cup
Onion-1/2
Tomato-1 small size
Bell pepper-1/2
Pasta sauce-6-8tsp
Olive oil-5tsp
Salt to taste Method
Cook pasta in a pan with water by adding 1tsp of oil.
After pasta is fully cooked, if there is excess water remove it.
Keep the pasta aside.
Cut onion, tomato & bell peper into thin slices of similar sizes.
In a pan add olive oil. Heat it add onion fry till it is looking like glass,add tomato and fry for 2 minutes, then add bell pepper fry for few minutes.
Then put pasta & add salt mix together.
Keep the flame in low, then add pasta sauce. Mix everything together, keep in heat for 30sec. Serve hot.

Tomato Bread

Tomato Bread
Ingredients
1 medium potato
1 large tomato
A few curry leaves
4 green chilies
1 cup water
5-6 bread slices
11/2 tsp. oil.
Salt
A pinch of turmeric.
Few coriander leaves for garnish. Method
Take a skillet and heat the oil, then add the cut potato, cut green chilies and the curry leaves.
Lower the gas and cover the skillet for a couple of minutes to let the potatoes cook.
After the potato is cooked add the pureed tomatoes and fry it for 5 min or till it dries a little bit, then add the water, salt and turmeric and let it boil.
When it starts boiling add the whole slices one by one, pushing it on side so as all slices get soaked nicely.
Now simmer for 5-7 min. Serve hot with chopped coriander on top.

Tasty Tacos

Tasty Tacos
Ingredients
6 Taco Shells
1 14Oz can of Refried Beans
1 Cup of Hot Salsa or Picante Sauce
1 8Oz can of Sour Cream
1 Cup of Shredded Cheese
1 Tomato, cored and diced
1 Small Onion shredded lengthwise
1 Cup of Shredded Lettuce Method
In a small saucepan, heat the refried beans along with the salsa or picante sauce until the two are blended nicely and it becomes hot.
Heat the taco shell upside down in the microwave oven for about 1 minute or according to the directions on the packet.
Put about two-three tablespoons of refried beans in the shell first.
Then follow it by shredded lettuce, onions, tomato and cheese. Top this with sour cream.

Stuffed Toasted Sandwiches

Stuffed Toasted Sandwiches
Ingredients
2 large tomatoes cut into small pieces
1/2 bunch of coriander leaves
2-3 green chillies
Salt Method
Mix all the above.
Switch on the sandwich toaster- butter both sides of bread slices
Place a slice on the toaster and fill it with the above mix cover with another slice and cook till done.
Serve hot with ketchup or chili sauce .
The tomato mixture can be replaced by leftover potato curry or any curry of your choice.

Ingredients
1 cup Wheat flour
1 cup All purpose flour
1 tsp Chilli Powder
Salt
Pinch of asefotida
1/4 tsp cumin powder
4 tsp oil Method
Mix the above ingredients into a dough by adding water and 4 teaspoons of oil.
Keep it aside for about 15-20 minutes.
Make poories and deep fry in oil. Serve hot with pickle or chutney.

Roasted Sandwiches

Ingredients
Bread
Rava 1 cup
Tomatoes 2
Onions 1
Green chillies 4
Coriander leaves 1/4 of the bunch
Salt Method
Cut tomatoes, onions, green chillies, coriander leaves into fine pieces and mix it with rava and salt.
Keep it aside for 5 minutes.
Then take bread slice and spread this paste on it.
Heat the pan put little butter on it and fry this bread slice on it, let the paste become golden brown then turn the other side of the bread.

Rainbow Sandwich

Rainbow Sandwich
Ingredients
1 cup gram flour
4 slice bread
Green chutney
Tomato ketchup
2tbs whipping cream
Half tsp cane sugar
Salt
2 pinch turmeric
Oil for deep frying Method
Add water in gram flour and make batter of dosa consistency, add salt and turmeric in the batter.
Add sugar in cream, mix well and keep aside.
Take one slice of bread and spread chutney over it and cover it with the second slice of bread.
Spread cream on top of the second slice and cover it with the third slice.
Spread tomato ketchup on top of third slice and cover it with the fourth slice.
Dip these slices in the batter of gram flour and deep fry in oil.
Cut the sandwich diagonally.
